snacks by Shira vol. 67: paleo sweet potato hash browns
2 cups shredded sweet potato, about 1-2 sweet potatoes
1/2 Tbsp tapioca starch
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
pinch of sea salt
optional toppings: fried egg, chives, red pepper flakes, and sliced avocado
- Preheat oven to 375.
- In a large bowl, toss together shredded sweet potato, egg, tapioca starch, garlic powder, onion powder, paprika, and sea salt.
- Melt ghee in a skillet over medium high heat. Place small batches of sweet potato mixture in skillet. Cook for 2-4 minutes on each side, flipping once.
- Place hash browns on a parchment lined baking sheet. Bake at 375 for 5-7 minutes.
- Serve with optional toppings.
