Snacks by Shira vol 83: paleo chocolate caramel pecans

1 cup raw pecans
1 Tbsp maple syrup
3 medjool dates, finely chopped
1 Tbsp unsweetened cacao powder
2-3 Tbsp coconut oil, melted
1/4 teaspoon of vanilla extract
pinch sea salt


  1. Preheat the oven to 350.
  2. Place the coconut oil, maple syrup, and finely chopped dates in a saucepan over very low heat, and stir until the dates are fully melted and incorporated (10-15 minutes). Mix in the cacao powder.
  3. Add the pecans to the saucepan and mix until combined.
  4. Place the nuts on a parchment lined baking sheet and sprinkle the sea salt on top.
  5. Roast for 5 minutes.
  6. Cool before serving.
  7. Enjoy!
