snacks by Shira vol. 70: paleo zucchini fritters with tahini
2 cups shredded zucchini (about 2 zucchini)
1/2 Tbsp tapioca starch
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
pinch of sea salt
for the tahini dressing
1/4 cup tahini
1 clove garlic
1/4 tsp sea salt
juice of 1 lemon
3 Tbsp water
optional toppings: radish and sprouts
- In a large bowl, toss together shredded zucchini, egg, tapioca starch, garlic powder, onion powder, paprika, and sea salt.
- Melt ghee in a skillet over medium high heat. Place small batches of zucchini mixture in skillet.
- Cook for 3-5 minutes on each side, flipping once, or until golden.
- Drizzle tahini and serve with optional toppings.
makes around 7 fritters
