snacks by Shira vol. 4: banana sushi

Another sweet snack that's low in sugar (completely refined-sugar-free, obvs) and bursting with flavor and texture.

makes 1 banana

Ingredients

1 medium banana, peeled
2 oz unsweetened baking chocolate (100% cacao)
1 Tbsp maple syrup

toppings: sesame seeds, unsweetened shredded coconut, goji berries, pistachios

Preparation

  1. Place banana on a parchment lined large plate and set aside (read: the below can get messy, so the parchment is there to prevent melted chocolate from sticking to your surfaces).
  2. In a thick saucepan or double broiler melt the chocolate over very low heat. Once melted, remove from heat, add maple syrup and stir until well combined.
  3. Carefully pour melted chocolate mixture over banana, using a spoon to smooth the edges.
  4. Sprinkle desired toppings on top.
  5. Place in frige to cool.
  6. Enjoy when desired!
